Clairin fans who want the wild white spirit softened but not tamed will find their bottle here. Aging rounds off Le Rocher's earthy, almost mezcal-like edge, but the roasted meat, smoke and solvent still come through, now joined by red fruit — strawberry and black currant on the palate. One taster calls it "very different from the unaged, the cask really blends well." Wood influence stays light, and the finish falls off short.

A brilliant rum! This three-year-old clairin is already superb: we find the character of the clairin blanc (meat, smoked, roasted, esters) but a little softened. I'd be very curious to see what a Rocher between 5 and 8 years old could give.
