HSE Château Marquis de Terme Finish 2006

Most tasters land somewhere between "very well done" and "the red wine finish isn't for me." Expect cherry, red berries and red wine up front, then a dry, spicy, woody finish with leather and dried fruit. This is what a red wine finish should taste like! It is present without taking over the rum. Red fruits, berries and cherry remain from the nose to the finish. There are also spices (cumin, cloves) - and a hint of sulphur, which leaves a little salt in the mouth and finish. Despite the low alcohol content, a lot of flavor comes together in the mouth. Reminiscent of a very elegant 2008 Ten Cane. A little too little action, but I could drink this almost every day.

A superb bottling from HSE, who have perfectly mastered their subject with this finish and this Vintage. The nose offers viticultural tones of red wine and grape, but also carries red fruits such as cherry and dried fruit. Spices are very present, notably chili, vanilla, pepper and nutmeg. A lovely woodiness and a hint of honeyed sugar cane accompany this round, gourmand and intense profile. On the palate, it's a dry, elegant, vinous and complex rum. The wine is finished in Marquis de Terme, a rather masterful touch that adds that extra touch of pleasant complexity. Red fruits (cherry), dried fruits and spices are also very present. Agricultural tones come to the fore with sugarcane, but remain subtle so as not to unbalance the profile. At 47%, the alcohol is very well integrated, neither too little nor too much. The finish is long, dry and tannic, almost astringent with the wine barrel. The spices are more prominent, as is a roasted side of walnuts and leather. The fruit remains red and dry, accompanying this elegant profile throughout. This is yet another example of HSE's remarkable expertise and willingness to think outside the agricultural box.
