9:On the nose is relatively dry, with peaches and is nicely buttery, on cane straw, with a touch of hot metal. Then one guesses a very concentrated quince paste, enamelled with liquorice and white flowers. The flowers and their vegetation take on a greater dimension, we get an image of fatty and exotic plants which give off aromas full of humus. Aeration reveals some touches of concentrated prune and quince paste, with a little drop of motor oil dropped into the mix. The latter contributes to a somewhat "industrial" atmosphere, with hot metal, latex, over which the fiery, fruity flow. 9:On the palate is very serious and at the same time very gourmand, typical agricole, fruity, impresses with its tasty notes, as milk chocolate, salted caramel, but also and above all with its unique profile. It seems to us to be in front of an old cane, with a mature, candied juice, a deep fibre, a patinated bark. The sugar cane flirts with orgeat, almond, and even has a mastic side that gives it a welcome thickness.You cannot escape/avoid the taste of cremebrulle. 8:On the finish, medium long, fruity scarves escape and eventually join some slightly metallic fruit pastes. This beautiful blend/aging from Mauritius reminds me of the famous Foursquare distillery. Indeed, this rum offers us an enormous delicacy (Pâtissier / Caramel au Beurre / Noix grasse), it's very tropical (Banana / Coconut / Pineapple). The wood brings its notes without upsetting the base juice (Leather / Sweet spices / Cereals (Malted whisky)). Beneath these woody notes, we find the vegetal side of the cane (Orange zest / Fresh / Herbal / Bagasse). Finally, a touch of empyreumatic (Smoke / Toasted (Coffee)). Mauritius is really nice!

Ferroni – BDF - Maurice 2013 - 62.4% A bottling highlighting the island of Mauritius, coming from the Labourdonnais, Chamarel, and Gray’s (New Grove) distilleries. While Gray’s works with molasses, the other two specialize in pure cane juice. This blend is therefore mostly made up of pure cane juice rum. Guillaume Ferroni received these unaged white rums and fully matured them at his home in Aubagne: 4 years in cognac barrels (French oak) and new American oak barrels. 2 years in an extreme dry warehouse (under metal roofing), in barrels that previously held rye and Jamaican rum. The result? A rum that is both oaky and fruity, combining freshness and indulgence. An extravagant and complex profile that’s definitely interesting!
