This is a really nice Bellevue that I got my hands on yesterday. Once again a rare cask, but sometimes you're just plain lucky scovering the Internet. The nose has a very strong vanilla and what smells like fresh sawdust to it. Maybe a bit too dominant. But once rested it releases a more musty and fruity side. The palate is lightly sweet with a mix of honey and burnt sugar. Then comes the spice and oaky followup and that is nice. Overall a semi complex palate. The finish is medium to long, sweet and once again has vanilla on the dominant side. This morning the glass had a vanilla oak nose.
