Tasted this fabulous rum during my recent visit to the distillery supervised by Larry Warren. If it hadn’t been because my rum budget was emptied I should brought a bottle with me back home. The nose is round, full bodied, oily, fruity and spicy with scents of tobacco, sherry, toffee, raspberry, peach, orange, apple, ginger and cinnamon. At the palate it’s full bodied, round, smooth, soft, sweet, spicy, fruity and woody with flavors of caramel, vanilla, mango, citrus and mahogany. The finish is rather long.

St. Nicholas Abbey is a working distillery inside a Jacobean great house from 1658, one of only three left in the western hemisphere. It is the smallest and most hand-made of Barbados' four distilleries, the only one that distils from estate-grown cane syrup, and every bottle is filled, corked and engraved by hand.
