Sip this neat and it plays tricks on you — the black-cane juice and refermented finish pull it so dark and vinous that several tasters swore they were drinking a molasses rum, not an agricole. Licorice runs through the palate, joined by caramel, dried fruit, sour cherry and warming spice. The finish turns bitter and a touch drying, which is where opinions split.

Edit : suite à l’achat de la bouteille. un nez entre le caramel et le beurre salé, une légère cire, des notes de sucre roux, et un petit côté vineux peut-être. Franchement on pourrait croire une mélasse. Avec aération des notes rares d’encens. En bouche : aucun doute, c’est bien ton agricole, encore vif sur la canne, herbacé, zestes de citron jaune, de la framboise, et pas mal bois. Des fruits sombres, une certaine acidité, et quelques épices. Finale moyennement longue, entre canne, herbes séchées, petit sucre brûlé. Y’a comme un air d’Angostura, c’est très concentré. Un vrai plaisir, une expérimentation réussie ! ———— Première revue en avril 2025 : Nouvel ajout RumX ! Dégusté au Rhum Fest Paris, une expérience unique car ce rhum élaboré à partir de 100 % de canne noire, récoltée en 2016 sur des ferrisols volcaniques. Le rhum a d’abord reposé un an en cuve inox, avant un vieillissement en ex-fûts de cognac en chêne français, puis une finition singulière en fût refermenté par adjonction d’acétobacter acétii. On balance entre un New Grove et un Navy au balsamique, vraiment intrigant. Difficile d’en dire plus sur 2cl mais je pense vraiment acquérir la bouteille !!

Goûté en sample chez Paf. Nez très gourmand et bouche en accord, très doux, sucrosité voir caramel. Juste un peu trop simple et presq5teop doux, mais très gourmand !

Goûté juste après le Bologne blanc indigène. Un très belle réussite ! J adore sa complexité maîtrisée ., car ça ne part pas dans tout les sens. Ce rhum nous dit que la canne est sa source , mais que travail fait sur son vieillissement peu nous diriger vers certaines caractéristiques d un rhum de mélasse. A l aveugle, je n aurais pas su parier sur la provenance.

#6186 03.01.2025 Relaxing in the cold weather with a few nice samples. Watching the TV series Body Cam. Nose Fresh, fruits, wood, plum, light floral, anise, light sugarcane, faint chocolate. Palate Round, balanced, fresh, plum, light cherry, light floral, anise, light sugarcane, light roasted, light spicy. Finish Long, wood, light roasted, light floral, light spicy, light cherry, faint chocolate. Empty glass Vanilla, light chocolate, cherry, faint grass, sugarcane. This is a very nice experimental release where the final process definitely results in something different.

De belle notes de noix de pécan grillées, Des feuilles de tabac et un alcool de noix la messe est dite un très beau nez! Une texture en bouche assez grasse c’est à ce moment là qu’on reconnaît la pâte agricole. En effet la canne fraîche fait son apparaition. Une belle expérimentation de Bologne avec ce jus de canne noire avec une finition en fût "refermenté". L'originalité vient de ce petit goût de réglisse au palais, plaisant et pas si commun. Dommage que la sortie soit (trop) limitée.
