Bayou XO Mardi Gras
Opinions land in the middle here. Most call it "a nice everyday and easy to drink rum" — brown sugar, orange zest, vanilla and a woody, gingerbread edge. A Louisiana molasses rum, not an Antillean-style one, and a few tasters found the aromas a bit thin and the finish short. Gourmand and soft rather than deep.

How does Bayou XO Mardi Gras taste?
Aggregated from 34 community reviews.
Soft, gourmand everyday sipper Well-liked as an easy, gourmand daily pour of brown sugar and oak. Several note the flavors fade fast and the finish stays short — pleasant, not profound.

Overall an OK rum, but quite overpriced. Tasted it at the Stockholm Beer & Spirits Fair 2023. This Louisiana rum from Bayou is a molasses rum. The sugarcane has grown in the soils around the Mississippi River Delta. After fermentation it’s distilled in a copper pot still whereafter it’s aged in ex-bourbon barrels and finished in ex-sherry barrels for a total aging of up to 6 years using the Solera method.

👃 I smell candied fruit, wood, burnt grass and a little vanilla. 👄 Caramel, a little honey and the roundness brought by sherry are added as I drink it, with a short finish. The result is an average 6-year-old rum, far from West Indian standards but probably suited to its domestic market.
