La belle surprise du samedi soir ! J’ai pris contact avec cette distillerie pour leur donner le conseil amical de rejoindre RumX. Intrigues et intéressés nous avons discuté un peu; et un petit loup a pointé le bout de son nez à la maison ! A la première ouverture, je n’étais vraiment pas sûr d’apprécier, les levures et le côté fermentaires étaient très présents. J’ai mis la bouteille de côté 1 mois et la, la magie a opéré. Les bananes vertes ont pris le dessus, les fermentes ont mutés dans un beau riz soufflé proche d’une kinder country, un côté herbacé et vert pourrait presque nous faire croire à un jus de canne (c’est une mélasse bio fermentée 3 semaines), et la finale proche d’une pâtisserie ou d’une pâte d’amande est relevée de légers épices qui durent. Alcool très bien intégré, c’est facile à boire; mais ça ne manque pas de saveurs. Longue vie à cette petite distillerie qui réussit très bien son entrée dans le monde du rhum avec un profil jamaïcain low esters très surprenant.
