Overall a fantastic, elegant and round rum that must be one of the absolute best low ABV 5 years old rums. This one has been on my shelf for a while. Everything from St. Nicholas Abbey is hard to get in Sweden so I waited for a second bottle before opened it up. This is the first aged rum produced by the distillery all by themselves. It’s made from their white rum that’s made from cane syrup in their hybrid still (column/pot) whereafter it’s aged in old bourbon barrels that previously contained their longer aged molasses rums from Foursquare.

This has a very different profile to the unaged version. It seems more refined and less vegetal. There are some fruits (apricot and banana), sweetness (toffee and caramel), peppery and almond notes. It is great to sip neat, albeit at 40% ABV it is fairly subtle in flavour, which is probably the main drawback.

Ein sehr schöner Rum für das junge Alter. Die kleine Destillerie nutzt dabei ausschließlich Zuckerrohrsirup/-honig für die Herstellung. Dieser Rum präsentiert elegante tropische Fruchtnoten, Mokka, etwas Holz und weißen Pfeffer. Dabei sehr ausgewogen und gut eingebundener Alkohol. Schon sehr gut zu Sippen.

Light but interesting nose. While made from sugar cane juice not super noticeable, some light alcoholic burn. Lots of pleasant elements but doesn’t quite come together as I hoped it would. Good but not great
