Here's the twist: this soft Dominican column-still rum has a chunk of high-ester Aroma Grande blended in, so faint Jamaican funk peeks through the caramel-and-coconut base. At 65% it drinks fuller than its slim body suggests. Give it 20 minutes to open and you get oak, cocoa, dried fruit and warm spice. Several tasters pair it with dark chocolate.

This is also a nice release. Once rested it releases nice flavours and I like the warm oily palate with light fruit and caramel. The finish is very long and warm and it draws really nice curtains in the glass.

High Ester Dominican Rum. 15 years old, tropically aged Dominican rum. Proportion in batch 80%. The remaining 20% comes from an Aroma Grande, High Ester. The blend peps up the smooth mild Dominican style and delicate Jamaican influences are felt. Thanks to the powerful 65%, the rum, which is rather slender and round in the mouth, appears very voluminous. The progress in the glass after 20 minutes is also remarkable.

Tasted at home Opened this bottle after the rom de luxe bottle from Belize (59%). Very nice rum. Definitely recommend it. The ABV is quite high, but the alcohol is well integrated. The high ester blend something you'd like or dislike, but for me it is definitely a plus.

Ce Dominican est un rhum brut de fût puissant mais parfaitement équilibré, avec une belle richesse aromatique : bois, cacao, fruits secs et épices. Son expressivité s’affirme pleinement après aération. L’accord avec un chocolat noir 70 % sublime l’ensemble : le cacao adoucit l’alcool, révèle les notes torréfiées du rhum et crée une finale gourmande, presque pralinée. Une dégustation intense, cohérente et élégante, à savourer lentement. Un accord à refaire sans hésiter.
