Père Labat BIO Blanc 2021

You might expect a white agricole to be all fresh grass, but this one leans richer — honey, beeswax, lime zest and a jammy, almost fermented sweetness from the extra-long five-day fermentation. At 60% it drinks hot and wild; a few tasters found it less crisp than other blancs but more distinctive for that confit-fruit side. Sings in a Ti' Punch.

This is a really nice release and I have tried a few of the white rums from Labat and most of them are really good. This one has a very fresh profile with an intense and dry profile. It needs time to rest before it releases all its flavours. Draws really nice curtains in the glass and I like the empty glass where the honey note gets even stronger. Price to quality is very good in my mind.

Edit: j'en ai acheté une bouteille (malgré le prix pour rhum blanc) et je dois dire qu'il ne cesse de me convaincre par son intensité, sa sucrosité, ce confit un peu macéré voire fermenté (sûrement lié au 5 jours de fermentation - le maximum pour un rhum agricole d'AOC Martinique) et ce côté sauvage qu'apporte les 60°. Sympa, ce rhum blanc est moins frais que d'autres mais il a un côté fruité et surtout confit qui le distingue. Les 60° le rendent intense mais peut être que quelques degrés de moins ou un peu plus de repos le rendraient plus rond...?

Crass! Alcohol top integrated, aromatic as if agricoles & rockley meet. Beeswax, honey, incense and citrus as well as tropical fruit and some mint. Very very awesome. An absolute blast in the Ti Punch as well. So far nothing comparable aromatically drunk to agricole!

Once again, a Pere Labat (which I don't normally like) but which surprises me in a very pleasant way. An agricultural nose but also hints of olive and sun-dried tomato, remarkable. More classic on the palate, with a finish reminiscent of aniseed or licorice, it is fresh, with a certain sweetness. Excellent.

The nose is very vegetal and floral. The fruit is barely visible, with a hint of lemon zest. The palate is full and unctuous, more to my taste than the nose. The cane is greedy. A hint of spice adds complexity.

On ouvre le bal avec l’apéro : un Ti’Punch au Labat Bio 2021 – 60%. Premier rhum Père Labat certifié Agriculture Biologique, élaboré par Jean-Cédric Brot (propriétaire du domaine depuis 2007). Ce projet, initié trois ans auparavant par la plantation de cannes bio sur des terres vierges de Marie-Galante, aboutit à un rhum dont la fermentation a été volontairement prolongée : cinq jours au lieu de trois. Le distillat a ensuite été réduit pour atteindre un titrage de 60%. Nez : agricole, avec des notes de vanille, poivre et agrumes. Bouche : chaude, vanillée, herbacée, fraîche. Personnellement, j’avais préféré le clos parcellaire, plus original et surprenant, avec son côté animal. Mais ce Bio reste un bon agricole, plus punchy que la version 52%.
