Rum here grows out of a long sugarcane tradition, with molasses-based column-still spirit at the core of most bottles. The tropical climate speeds up maturation, and the best-known style leans sweet — heavy on vanilla, caramel and candied orange, often with added sugar. Tanduay, one of the world’s biggest rum producers by volume, and La Tondeña have supplied the domestic market for over a century.

Community feeling is split. Don Papa, the brand most drinkers encounter first, draws sharp criticism for its sweetness and artificial edge, though its unsweetened cask releases fare better. Meanwhile the Luisita single estate rums from Tarlac have surprised several members with genuine funk and fruit closer to Jamaica than to the sugar-forward mainstream.
