Haiti makes rum on two tracks. On one side sits clairin — raw, unaged spirit distilled from cane juice or syrup by small village producers like Sajous, Vaval, Casimir and Le Rocher, full of olive brine, fresh grass, glue and overripe banana. On the other sits the French-inflected elegance of Barbancourt at the Distillerie de Port au Prince, where double-distillation and long oak ageing give rums a cognac-like polish.

The community leans toward the clairin side. Reviewers describe these as some of the most characterful cane spirits made anywhere — divisive, funky, and unmistakably local.
