Rum has been distilled here since the 1860s, when sugarcane took hold in Queensland’s tropical north. The style that reaches most drinkers today runs through one name — Beenleigh, near Brisbane, whose pot-still spirit fills the vast majority of the independent bottlings on RumX. What comes out isn’t Caribbean funk exactly. It sits closer to fruit brandy: pear, apple, mirabelle and citrus, with a floral edge and a woody, spiced backbone.
