Most of these rums follow a two-stage path. A cask matures a few years under tropical heat at the source, then travels to Europe to finish in ex-bourbon, cognac or rum barrels. The Belize 2017, for example, came from Travellers with three years on-island and a further year in an ex-rum cask, bottled at 43 percent without additives. The Fiji six-year single cask spent two years tropical and four in ex-cognac wood.
