New Grove comes from Grays Distillery on the south coast of Mauritius, next to the Aventure du Sucre sugar museum. The rum is distilled from molasses on a column still, and many of the bottlings mature under tropical climate before release, which concentrates the fruit and adds a warm woody edge. The house signature is fruit-forward and fresh: peach, apricot, yellow plum, red and black currant, tropical mango and passion fruit, laced with a cooling menthol or eucalyptus note and finished dry with a touch of oak bitterness.
